How can i take the doors off my 02 wangler x without the door chime going off????

Disconnect the door switch. If you look at the body where the door meets the body there will be a rubber switch that when depressed indicates the door is closed. Remove the screw holding the switch in and pull the switch out. Pull the connector out and the switch will be dead.
